Prep time: 5 minutes (if not counting the soaking time).
Serves 4 or more
1 cup soaked for a couple of hours raw cashews
1.5 cups of water
1 tbs thyme (more if you use fresh)
1-2 tbs nutritional yeast
salt to taste
Mix all ingredients into a blender and then blend, blend, blend! It will become creamy after a little while.
I served this with raw zucchini noodles (spiralized zucchini), but it will pair good with almost anything. My husband likes his slighlt warmed and with some cajun spices added into it. Add whichever ad-ins you like. it was very tasty with portabello mushrooms and sundried tomatoes, but I think pretty much anything would do!
